We enjoyed the Junmai-shu made by Yamahai.
The sake has been in storage at a low temperature for a little while, so the characteristic "angle" of new sake has been removed, and it has a roundness, fullness, richness, sweetness and umami, along with the acidity typical of Yamahai. It might even be good warmed up!
I can't wait to drink the new sake!
