The pear-like ginjo aroma and elegant sweetness are typical of Aizan? The subtle acidity and sharp bitterness in the aftertaste finish it off crisply.
I have had about three kinds of Shidaizumi so far, and all of them have a clean and dry impression. I like this type of sake.
