This is the first of this year's new sake classics. I'll start with the Oligarami's Biao formula. I'm looking forward to the Zero Shiki as well.
The taste is the same as last year, with a perfect balance of calm umami, acidity, citrus, and freshness. This is a taste that only Kame-no-o can produce, and I still like the classic Edobari the best.
It is an origami, but since it is a classic sake, this does not count as a so-called seasonal new sake nigori.
As for Sentori, I have the impression that Retro has a deep sweet and sour taste, Modern has a gorgeous sweetness, and Classic has a calm and fresh taste, so I guess Classic is my guess.
If they come out with another Classic, I'll buy it. Thank you for the treat.
