This is a local sake from Chiba. I've heard of it, but it's not sold very often, but I found it at the roadside station Fermentation no Sato Kouzaki, so I bought some.
The color is only slightly colored.
The aroma is sour, like a lactic acid drink.
When you put it in your mouth, you can taste the sourness and the bitterness, but it also has the flavor and the freshness of a lactic acid drink. However, it is unique in that you can feel the fermentation like blue cheese or tofu.
It is a taste that reminds us once again that sake is a fermented food. It's definitely one of those things that you're going to love or hate, but if you're into organic, fermented foods, this one's for you!
