First time in a long time, and this is the first time at Sei that it is made with a sake brewer's yeast! The aroma is a modest ginjo aroma. The first sip has a slight sweetness, which is quickly followed by umami and sourness, which is cut off by bitterness. The acidity is like vinegar or lactic acid? The umami acidity was impressive. It is easy to drink. Since it is a draft sake, it is even easier to drink due to the tingling sensation.
