My first time at Tenbi. I bought it as soon as I got off the Shinkansen.
The bottle was opened with a light swoosh. The aroma was peachy, perhaps influenced by the label.
The mouthfeel is a light shwash. It is light but sweet, but also dry.
After the sweetness, there is a slight acidity and astringency. Then there is a fruity sweetness that traces the edges of the tongue. The sweetness here is a bit sticky.
I'm still in awe of Amami.
I tried it with caprese, kiriboshi-daikon and shijimi clam miso soup, and as expected, the caprese went perfectly with it.
