I have never had Hinomaru Brewing, but they have a brand called "Shinjin" that is made from nama-moto, and the Mansaku no Hana brand has a few (only?) nama-moto brands. I guess so.
Akita-style brewing is said to add one more step to the standard nama-moto process, and it is a very careful brewing process that I appreciate.
It is shipped after a year of aging, and all the flavors were harmonious and full of flavor 😉.
55%, 16 degrees, fire-aged.
