Hououbiden髭判 純米大吟醸酒 瓶燗火入
けいけい
The standing aroma is more melon than pineapple. It is beautiful, but a bit more subdued than expected.
When you drink it, there is not so much sweetness as you might expect from the standing aroma, but rather a slightly mellow umami flavor that is lifted by the acidity.
The bearded character is not a wild taste, but rather an image of the wild hair that grows on the tips of the rice ears of Kame-iki, a variant of sake rice from Kame-no-o'o.

This was one of my favorite Houou Mita's I've had so far.
