Trip to Shodoshima Island!
First sake from Kagawa, "Ayagiku sanuki olive".
I was told that they use olive yeast, which is typical of Shodoshima, and the aroma certainly has a very organic, earthy flavor. It smells like a mixture of banana and pear.
In the mouth, refreshing acidity spreads while the sweetness of the rice lightly spreads on the tongue.
The lingering aroma is not that fruity, but rather smooth and smooth.
It was a perfect accompaniment to the olive yellowtail.
