Yamadanishiki Polishing ratio 48
Sake degree +2.6
Acidity 1.6
Kyokko's number...no, version 6
Kyokoh was a summer favorite of mine because of its great cost performance.
This time they used yeast #6, and the Junmai Ginjo cost less than 2000 yen.
It is a little expensive for me.
...but it's good!
Well, there's no doubt about it - Kyokai No. 6.
It's clear, with a gentle sourness and freshness like an apple.
In the future, I'll post the sake rice, sake level, and acidity if I can find them.
It's delicious!
