Hiran's Kijoshu.
I found myself in Nagasaki for the second time in a row.
It's a "Kijoshu" of "Hiran", so we knew it would be delicious.
The acidity is as good as the rich sweetness, and it enhances the complex taste that is unique to "Hiran". The acidity that matches the rich sweetness enhances the complex flavor of the sake, and the combination of the acidity and the sweetness transforms into an unbelievable umami.
I wanted to savor it slowly, but my cup ran out quickly as I unconsciously drank more and more.
