Refreshing and fruity aroma. The mouthfeel is so beautiful that you may think, "Oh, it's non-alcoholic...? but the sweetness rushes in after the acidity. It gives the impression of pears. The umami is strong, but the overall flavor is refreshing.
I think it would be better with lemon than shiso, and with marinade or carpaccio than sashimi. It is like a wine or Riesling.
Light and light...perfect for those who don't like the robustness of sake, but maybe not enough for the true drinker.
