This is a new brand from Ten-Taka (maybe 2 years ago), Kuo, whose concept is to be flexible and unrestricted.
This time I was able to buy this one. Koji rice: Tochi Sake 14 20%, Kake rice: Yumesasara 80%.
The aroma is fruity, apple-like, with a hint of grain and a little alcohol.
The taste is mainly the mild flavor of rice and grains, not so much sweetness but dryness.
I've never had Ten-Taka before, but I guess Kuo's meaning of "challenging sake brewing" is not modern type, but unique sake like Miyoshikiku for example.
I think it's alright, but I don't think it's my favorite because it has a strong sake feeling. The Yumesasara Koji/Tochishu 14 Kake is said to have a fruity sweet taste, so I'd like to try that too if I get the chance.
