Taste & Aroma
The nose has a slightly mild but firm ginjo aroma with a fruity flavor of apples and strawberries. In the mouth, it is light, dry, and very refreshing. However, it soon develops acidity and a fruity aroma, giving it a fruity flavor for a dry sake. The taste gradually becomes more complex and bitter, but it is not too assertive, so the aftertaste is pleasant. This sake is easy to drink, yet the changes in flavor and aroma are clear and delicious. It is also recommended to be chilled to get the initial refreshing taste. Perhaps you may want to chill it with ice while you are drinking it.
Matching dishes
This time, I paired it with a one-pot dish of oysters and chicken dumplings. However, I made it light in order to highlight the oysters, so I felt it was a bit overpowered by the sake. If it is a nabe, it would be better to make it thicker. Also, this sake is easy to drink and enjoyable to change, so I think it goes especially well with sashimi. It seems to go especially well with fish with a strong flavor, such as tuna, bonito, and flatfish.
