This is an unusual autumn sake that has been aged for about six months.
Personally, I can't let my sake mature, so I am very grateful that the brewery is doing this for me!
The taste is relatively light, as one would expect it to be more robust.
Perhaps it is because the rice is Hachitan-Nishiki, but it even tastes light.
However, it also has a sense of weight, and a nutty savory taste spreads afterwards.
As the label says, it is best served with cheese!
