The wine is bottled when it has been exposed to air and the flavors have opened up a bit. It is bottled when it has been exposed to air to open up the flavors a bit and reduce the gassiness, making it more rounded and mellow.
It is so good that there is probably no one who doesn't like this sake. I want people who don't like sake to try it. I think it will change your concept of sake!
