It's been a long time since I've had Sentori. I like Sentori more classic than modern. This is my first time to try Omachi.
It has a strong acidity that is typical of Sentori. It has a mild impression though it has a strong umami like Oumachi. It is dry with a touch of umami and sweetness. Then there is more umami.
The umami is strong, but it also has a lightness that is typical of a 14% sake, which makes it seem a little thin.
The silhouette is a little vague.
It is delicious, but not my favorite.
