When we visited the brewery, we were told that the sake was made using a special method called "rejojo-shu-kinjikomi super sweet sake," in which pure rice sake is added instead of water during the brewing process. It is a sweet sake reminiscent of muscat, but it retains the umami of rice and spiciness typical of Sasazukushi, and is very tasty without being overly sweet.
