First of all, I thought this sake was very unique in terms of sweetness and acidity. The numbers and labeling confirm this, and it's made with polyacid yeast and -30 Nihonshudo. That's what makes it so unique. There are many aspects of this brew that make it unique. We described the aroma as being like a pineapple, but the acidity is more complex, making it one of the juicier pineapple flavors. On the other hand, the flavors showed a variety of characteristics. The sweetness was strong and therefore clear and clean, the acidity had a range of complexity, and there was a thickness that came from the thickness of the texture, which was truly packed with character. But it was not only packed with character, there was a harmony between the personalities and it was very enjoyable.
