It is said to be inspired by Nara Brewing's Kaze no Mori collaboration beer "UNDERWATER", so if you have a chance, compare the two. First of all, beer 🍺 (the description is happoshu). This beer was brewed using Kaze no Mori brewing water, yeast No. 7, and soya water. First of all, it has a very dark golden color. The aroma is strange...like koji mold. Quite a unique flavor. It tastes like savory strawberries...like amazake...what does it taste like if you drink it for the first time? It is a strange taste. And then there is ALPHA8🍶. The rice is not steamed, but instead is roasted like malt used to make beer, to encourage the decomposition of the rice. This one is also quite dark yellow, with foamy bubbles and looks like beer. The aroma is... aromatic, like barley, or whiskey? It also has a medicinal quality to it...like it has a certain atmosphere. When you take a sip of it, you can feel the fizz, the caramel-like aroma and bitterness like beer, and the sourness at the end makes you feel refreshed. It's kind of addictive. I wonder if 100% unpolished brown rice can produce this kind of flavor. It's a strange taste, totally different from what I usually drink, but it's interesting and has a refreshing aftertaste, so I can't help but drink it.
