Cold sake
Charred malt. A garage in winter in Niigata. A lot of brownish leaf radishes are lined up.
We drink it. It goes in easily, and you feel it is not enough. But it is short-lived, and the mellow rice gradually comes to the fore. It is light, sweet and thick. After swallowing, it disappears like water.
45℃.
Rice bran. Deepening winter. Falling snow.
Drink. It starts with a burnt bitterness. The sweetness almost disappears, and there is a smoky bitterness and an astringent taste. A hard richness in the back. As you swallow, the back of your throat gets hot and the alcohol leaves your nose.
55℃.
The snow has stopped. There is no one around. There is no one's footprints in the silver world of the Oxen.
Drinking. It starts with the richness, bitterness, and aroma. The flavor and bitterness stick from the inside of the mouth to the back of the throat. When you swallow it, it has a rich and dry taste.
65°C
The aroma becomes light and diffuses in the air. Burnt Milky
Drinking. Returns to lightness. All elements harmonize and are most balanced. Among them, bitterness, sweetness and richness stand out. As you swallow, the acidity stands out slightly.
The characteristic of this sake is that there is no outstanding feature. You can enjoy it without thinking about anything.
I paired it with pork, myoga (ginger) and boiled egg, but I wonder if fish would have been better.
Yamashiroya. I don't think I'll be repeating this dish, but with the new one in front of me, I'll probably be adding it to my basket without even knowing it!
