The aroma is slightly rice flavor with a hint of sweetness.
When you put it in your mouth, it has a gentle but clear acidity. The acidity spreads further, and the umami and alcohol gradually increase.
It was just as the label depicted, a refreshing, dry sake. Refreshingly sour, dry, and umami. There is almost no sweetness.
The dish was sea bream sashimi served with ponzu (Japanese citrus juice). The refreshing acidity of the ponzu and the umami of the sea bream were combined with the refreshing umami of the sake. It is very good.
If I were to use a Ghibli analogy, I would compare it to Satsuki from "My Neighbor Totoro". A fresh summer girl living in the countryside. She is not sexy yet.
