This Kaze no Mori was brewed as a 25th anniversary limited edition sake with the image of Kaze no Mori 25 years later.
It is characterized by the use of five types of yeast, yellow yeast, lactic acid bacteria, Pichia sp. and white yeast in order to achieve a multilayered aroma and flavor that is the result of the workings of a diverse range of microorganisms.

I thought the pungent taste would spread quickly with a dry mouthfeel, but after the pungent taste, the melon juice followed and the aroma escaped through my nose.
The melon taste was followed by a honey-like sweetness and astringency, and finally the mouth was glazed 🤤.
Compared to the Wind Forest I have been drinking, the dryness and pungency are more pronounced 😎.
As it calmed down from the kinkiness, the pungency was reduced and the sweet astringency of citrus fruits such as hashaku appeared, followed by a cream-like flavor without sweetness 😋.
The wind forest is concentrated 😚.
