4. 807 series Akitsuho. The palate is quite fruity with melon-like fruitiness and a carbonic acid fizz. The 80% polished rice gives it a strong, dark rice flavor. Akitsuho, junmai, 80%, unfiltered and unpasteurized, about 1,500 yen, Otsuka Sake Shop in Honmachi.
