Almost no sweetness, very dry.
Fermentation feeling of lactic acid bacteria like yogurt at the moment of drinking. It is not an unpleasant sourness, but a sweetness feeling of yogurt, refreshing.
When you explore it, you can feel a sense of oak and the smell of wood.
The aftertaste is like rice shochu or whiskey aged in a Japanese sake barrel. I drank it while eating sukiyaki, and the way it resets the rich, sweet flavor is wonderful!
Even right after drinking a fruity junmai ginjo, you can still taste the umami!
