It's a Momoten aka Tenbi Junmai Ginjyo Usunigori Nama-shu from Choshu Shuzo in Yamaguchi Prefecture!
I've been wanting to try this sake for a long time, and luckily I was able to get it!
I had it cold as a flower gift sake for a person who will be transferred in April 🍶.
The specs are as follows: Sake rice is Yamada-Nishiki, rice polishing ratio is 60%, brewed with 901 yeast, and alcohol content is 15 degrees Celsius.
The appearance is a light cloudy color reminiscent of a flower cloud.
The aroma has a hint of ginjo aroma, but it is more like the fresh flavor of koji.
On the palate, the texture is thickened with a sense of sizzle, and the taste is sweet and sour with a harmony of sweetness and fruity acidity like that of muscat.
It then fades away, leaving behind a nuance of acidity.
Rolling on the tongue, the thick, juicy sweetness and flavor become more pronounced.
The overall impression is of a soft veil of softness, yet with a refreshingly refreshing sourness and sweetness that makes one feel very comfortable.
The taste reminded me of the coming of spring, as if a warm breeze was blowing and cherry buds were opening and blossoming.
As we exchanged memories, we found ourselves emptying the four-pack before we knew it.
