Yamada-Nishiki, which tends to produce sake with a high aroma and rich, natural rice flavor and sweetness, is milled at a low 80% and only 20% of the rice is shaved off.
Since the center of the rice contains starch and the surrounding area is rich in fat and protein, the more rice is milled, the greater the proportion of starch becomes, and the fat and protein portions become the flavor of the sake as umami and bitterness, which should result in more miscellaneous flavors,
However, after feeling the fresh, slightly fruity aroma that is typical of Kaze no Mori, the rich umami and sweetness of the rice, typical of Yamada Nishiki, spread softly and pleasantly in the mouth. There is no hint of a tangy taste.
This is a bottle of Kaze no Mori that allows you to taste the original flavor of the rice even more than other Kaze no Mori bottles.
