Last time I enjoyed Yamamoto #6 yeast 😊I was really curious and bought Yamamoto #7 yeast and had a tasting with steamed scallion and sashimi 🍶.
First of all, I am impressed by the fresh mouthfeel, and I feel a little more schwarziness and mellow rice than No. 6 yeast 😁 I take my hat off to its softness 🥺.
Muscat on the palate, with complex changes in the mouth. There is no aroma, but it is a fine sake that does not interfere with the meal 🍶.
I added fried squid with XO sauce to my entrée...NICE balance, can be served with Chinese food 👍I thought it was the strongest in Yamamoto's history...I was impressed 😃.

I gave it to someone who likes dry wine.
