I knew of its existence, of course, but this is the first time I have had Shinomine Nigorizake🍶.
I was curious to try a long-established brand of Nigorizake, and bought it. I was very happy to see that the price is reasonable ☺. I'm glad its price is reasonable too☺️.
First I had the supernatant and it was surprisingly sour! Of course, it is not degraded like acetic acid, but a pleasant sourness of malic acid. There is also a hint of sweetness and the umami is not so strong, making it very easy to drink.
I wondered if the nigori portion would have a stronger umami, but it did not, and it seemed to emphasize the flavor of the supernatant, in other words, the acidity was also very effective.
It has a clear aftertaste without any clutter.
It seems that the use of yeast No. 77, which produces a lot of malic acid, is the reason for this refreshing feeling 😆 I wondered if it was a good first time for muddy sake. I was so impressed with the taste, I really want to try the junmai sake next time ✨.
