Continuing from yesterday, this is the second "Yamekoto Hajime" sake I'm interested in. We opened a bottle of "Polishinai, Gin-no-sato".
This is a low-pasteurized sake made by reducing "Gin-no-sato" by only 82%. I have tried low-polished sake before, but 82% is a new territory for me personally.
The taste is dry, with a hint of sweetness and a beautiful acidity. It is easy to drink, without feeling the habit of being low-polished. It would be a good match for sushi, sweet and sour pork, and other dishes with acidity.
This is a bottle that raises expectations for the third release. Delicious: ❗️
