It is crisp and dry. The sweetness is quickly followed by bitterness. It is an old-fashioned sake, but it is just right because it was paired with simmered Yanaginomai.
I was reminded once again that old-fashioned sake is made to be served with food. The bottom line of sake is amazing.
Sweet, bitter, sharp, old-fashioned A+.
