My inner Akagisan craving has exploded, so today I opened a bottle of the limited edition sake I had in stock! I've been buying the Shiba Inu label every year since it was first released, and I can't wait to see what it tastes like again this year. When I opened the bottle and poured it, it had a faint peachy aroma. The aroma is clear and fresh, like white peaches. The mouthfeel is clean and pure like a clear stream, as is typical of Akagisan. The taste is bright and full of flavor, with melon and apple, which is typical of unfiltered sake. The combination of beautiful sake quality, refreshing acidity, and sweetness that comes out in a flash. It tastes just like an apple! Hints of aroma reminiscent of green fruits. The work in the vat and the freshly pressed greenish sakes come to mind 👍. The finish is crisp with a sharpness and acidity that is typical of Akagisan, and is so light that you should not drink too much 🍎. It has a strong flavor, even in the Akagiyama series, because it is unfiltered and unpasteurized. And although it's not a summer sake, the blue bottle and the color of the label make for a cool and refreshing experience ✨.
