This is also tasted at Noboriya Sake Shop near Kinugawa Onsen Station in Tochigi Prefecture.
This sake was pressed on the morning of Risshun, February 3, 2021. The owner went to the brewery that day to purchase this precious sake. Risshun Asashibori is said to be a sake that makes the toji (brew master) work very hard, and because the sake is only pressed on Risshun Day, it requires perfect management to prevent the sake from being made too early or too late, based on the quality of the rice and changes in the climate. It seems to be a sake that makes the toji cry.
It tastes fruity, smooth, and easy to drink. It is an easy to drink sake that you can drink easily.
By the way, the word "Senkou" means a sacred bird or a precious bird.
