This is the ultimate food sake. It goes well with everything, Japanese, Western, and Chinese. The 80% Aizan has a perfect balance of sweetness. Aizan was a little too sweet for my taste, but I thought the balance of the 20% blend was important.
Since the acidity and fizziness are suppressed, you can taste the full flavor of the rice afterward. I thought it might have something to do with Brilliance, Kamonishiki's highest quality brand. It should be served at a temperature of -5 to 10 degrees Celsius, and should be cooled down to a crisp.
Personally, I love Kwang Suisen, which is 1,000 yen cheaper than Banshu Aizan.
