Local Sake
I think Gifu has quite a lot of crispy ones!
Soba and sake go well together.
This sake is also very sharp and goes right in!
Since it is not so peculiar, it does not interfere with the dish but enriches its flavor!
The shrimp shinjo (a kind of pickled shrimp) that was served at the end of the meal was also very tasty!
