ミドサー酒呑童子
One sake in a glass at an izakaya (Japanese style bar).
It has a light texture and is almost transparent without filtration. The top-tasting aroma is "slight".
In the mouth, it has a nice isoamyl flavor. It has a definite ginjo aroma, probably due to the long low-temperature fermentation, even though it is 65 polished.
Following the aroma, the gasiness and minerality typical of ultra-hard water can be felt.
The umami of rice, mellow sweetness, and assertiveness of the five tastes then follow in good balance, and finally it pulls away sharply, leaving a slight sense of raw sake.
Overall, the impression is of an easy-drinking, clean, unpasteurized sake with a modern flavor.
