Soft lactic acid bacteria beverage tops off.
Not as sweet as expected. Weak acidity, little pungency or bitterness. Zero-g weight and fresh.
It is sharp and has a clean aftertaste. The high points are that it is not too sweet and that it does not leave a lingering alcohol taste.
There is no sign of rice, and not even a trace of rice can be felt anymore. On the other hand, it is not fruity either.
It is a lot of things that are not there, but I believe that sake brewing is originally about extracting the core of the sake by cutting away the unnecessary things. It is like a Buddhist sculptor carving a statue of Buddha out of a solid piece of wood (or digging out a statue of Buddha that is buried inside).
In that sense, the purity of the taste is extremely high. I wonder how they can do such a feat. I applaud the craftsmanship of the makers.
