Compared Yamagata Masamune Junmai Omachi Namemasa and Shinmasa Ecru. As the description "very Shinmasa-like" suggests, Yamagata Masamune's Shinmasa-ness is tremendous. I can distinguish between them because they are ecru, but if they were R-type or S-type, I might not be able to distinguish them. It's amazing.
But I think there is a difference between acidity first and umami first.
