It's been a while since I've had a sake that heralds the arrival of spring🌸. From the Imanishi Sake Brewery in Nara Prefecture (Sakurai City) comes Mimuro Sugi no Hana-kun! This sake is brewed near Miwa Shrine, which is dedicated to the god of sake, and celebrates spring. The label and name are cute, but the sake rice is 100% Omachi (60% polished rice), a gory and gaping moe. It is a gentle sake with 13% alcohol by volume. The appearance of the sake is a bit of nigori (cloudy). When the bottle was opened, the bubbles were rising and almost bursting out of the bottle. When poured into a glass, the bubbles not only stick to the surface, but also float to the surface in a fine, champagne-like foam. The aroma is pleasant, with a ginjo aroma of ripe bananas and melon, with a fresh koji aroma and a lactic acid bacteria nuance to it. On the palate, a refreshing sourness fills the mouth, and on the tongue, you can taste the certain sweetness of Omachi, with a hint of umami on the other side. The overt aroma is of ripe melon, but the overall flavor is of koji malt. On the back palate, the crisp and refreshing acidity is cut off with a sense of gas. While refreshing, it disappears leaving a bitter taste at the end, leaving you wanting another sip! To put it mildly, it's so good it won't last until Hanami. Highly recommended!
