Parallel tasting of Aramasa Colors in 2021 & 2023. The 2023 comes with very fresh taste with some small bubbles feel. On palate it comes with some fresh lemon sourness (due to use of white koji) and i think of something like calpis too. I would say the 2023 version is still a bit plain. Meanwhile the 2021 version is much richer and comes with more layers. Not only the fruity sweetness, but it also carries the lactic acid saltiness like cream and yogurt. Umami can also be spot at the end.
