Takatsugu
Today, we opened a bottle of this colorful sake, a change of pace from the usual.
This junmai sake was stored in oak barrels used to store red wine. The pale peach color is eye-catching, probably due to the remnants of the red wine. The taste is gentle, with a pleasant acidity that spreads quickly and slowly spreads to a delicious flavor. It is a strange sake with a gap between the appearance and taste in a good sense. Moreover, the rice polishing ratio is 85%. This is a surprise.
This is a strange bottle that reminds us of the wide range of Japanese sake. It is delicious. ❗️
