This is a continuation of my previous post on Sentori.
The mouthfeel has a slight gasiness and acidity, and the umami of rice, which is typical of Omachi, is very smooth and dry with a clean aftertaste.
Tonight's sake entrée was fried horse mackerel and furofuki daikon radish.
The flavor of the rice is expressed in the seasoned Furofuki Daikon radish,
The oiliness of the fried horse mackerels and the acidity of this sake will reset your palate.
The acidity of this sake resets the oiliness of the fried horse mackerels in your mouth.
I would like to have another bottle of this sake as a spare.
