Yamadanishiki 22% Saga no Hana 78%. Rice polishing rate 60%. 16° Sake meter -4 Acidity 1.7 Sourness is crisp and clear. Then it is finished with bitterness. The acidity is very high. The acidity is almost like a refreshing white wine. We didn't catch the sweetness. After two days of challenge, the sweetness of the rice came a little bit. The swelling of the rice also increased. I wonder if the acidity was reduced a little.
