I visited Nishibori Sake Brewery and purchased this sake.
It has almost no sweetness, but has a profound flavor that includes the tangy taste of the rice.
The aroma I felt was
-Aroma: Slight aroma of rice
-Aroma: Aroma of rice with a hint of tanginess.
The higher the number, the stronger the taste.
The higher the number, the stronger the taste (5 is the maximum)
-Spiciness: 2 at the beginning → 2 in the aftertaste
-Sweetness: 0 at the beginning → 0 in the aftertaste
-Sourness: 0 at the beginning → 0 in the aftertaste
-Bitterness: 2 at the beginning → 3 in the aftertaste
-Rice flavor: 2 at the beginning → 2 in the aftertaste

You can do quite a variety of tasting, and the interior of the store is quite stylish, especially the whisky brewery which will start selling next year (information that has nothing to do with sake.... 😅)
