The nose has a sourness that comes to the forefront as if it were 2 parts orange and 8 parts acetic acid. After drinking, the yogurt-like acidity lingers in the aftertaste. When I drank it before, I had the impression that it had little umami and other flavors despite its low rice polishing, but this time, I got a different impression, as I felt it was quite a local sake. It was delicious with a salad with a strong dressing, and I think that white wine might be closer to its rival than sake, but then I thought it would be hard to make a repeat purchase because of the cost. I thought I would not repeat it myself, but it is nice to receive it as a gift.
