Peachy fruitiness and acidity. But I think it has a bitter taste for a hana eup. The bitterness adds depth and makes you want to drink it slowly. It's like you're tasting the sweet part of the peach, the skin, and the area around the seeds. It's delicious. It's the same Hanayuup's raw sake, but the lack of bitterness makes it seem sweeter than Dewasanzu. (I am not sure because I already drank all of Dewa Sanzan and cannot compare the two. The sake level was -7.9 for Dewasanzan and -7.8 for Akita Sake Komachi, which is almost the same numerically).
