Yamada Nishiki. Contract cultivation in Hyogo Prefecture (100% used). When you drink it straight, the sweetness comes first, then it's thick and strong. When you drink it on the rocks, it becomes well-balanced and very pleasant to drink. It's called "ice wine (Rockzake)", so it has to be drunk on the rocks to get the right balance. It's so well thought out and structured, it's amazing.
