Yamagata Sake
Eikofuji Sake Mirai Junmai Daiginjo Unfiltered Nama-shu
This is a sake from Yamagata. I can't find Eikoufuji anywhere near me, so I go to a liquor store about 50 km away to buy it. Sake Mirai is the name of the rice used to make sake, which is produced in Yamagata. There is a version made from Sake Mirai in Hanamamu as well. Eikoufuji has many versions, and most of them are made in a very labor-intensive way: unfiltered raw sake.
The taste of Eikoufuji's Sake Mirai is refreshingly sweet, like strawberry, and it disappears easily without any cloying taste. Even though it has a sake level of -10 degrees, there is no dullness to the sweetness. It is light and easy to continue drinking. This is the first time I have had Eiko Fuji, and it tastes great. I would like to drink the various versions that come out each month.
