Tonight, we had the Chou-Oroku unfiltered raw hiyaoroshi from Shimane Prefecture... my first time with the Oroku. First of all, it is sold in a perfectly preserved condition and is only available at 34 stores across the country, so if you don't have a store near you, this is a difficult drink to buy. If you don't have a store near you, it's not easy to buy it. Fortunately, I was able to buy it from a store I often visit, Mikada Sake Shop. I didn't know anything about it and the wife picked it out for me 😅This time, it was made in 2016...the color was a bit yellowish. The aroma is a bit yellow in color. It's difficult to describe because of the light aroma. The taste is like umami, sour, bitter, astringent, and pungent, but I wonder if it's a good representation of bitterness. It makes me want to seek out this bitterness more and more... delicious... and it makes me want to try another brand. I think I'll enjoy it tomorrow, either a little higher or warmed up.
