Opened a bottle of "Senkohana", a seasonal sake from "Senkou".
It is an unfiltered unpasteurized sake brewed with a blend of Yamadanishiki and Omachi.
It has a lactic sweetness and a pleasantly crisp acidity. It has a pleasant taste that eases the summer heat. Even unfiltered sake with an alcohol content of only 13% has a strong umami flavor.
A great bottle to enjoy summer not with the sound of sparklers but with your tongue. Delicious: ‼️
